Are you one of those people whose eyes glaze over at the sight of a recipe with more than five ingredients? You lose interest entirely and move on to the next one. Yes, I understand the sentiment. That’s how I felt about this one when I first saw this Cinnamon Roll Cake recipe. But then I heard all the rave reviews and knew I had to make it!

CAN I SUBSTITUTE WITH A BOXED CAKE MIX?

Yes, you can. You could substitute a vanilla cake mix for the vanilla cake and then make the cinnamon roll filling and swirl it around. Then follow the remainder of the baking instructions. I believe that a butter pecan, white, or yellow boxed cake mix would also work.

Preheat oven to 350 degrees Fahrenheit. Using nonstick cooking spray, coat a 9×13 baking dish (I like the kind that has flour in it.) Combine cake ingredients in a large mixing bowl (or the bowl of your stand mixer) (except melted butter.)

While the mixer is running, add the 12 cups of melted butter in a slow, steady stream. Combine just until combined – overmixing flour in baked goods can result in a tough, rubbery texture. Distribute the batter evenly in the prepared baking dish.

Now comes the time to make the filling. Combine all filling ingredients in a small bowl: softened butter, brown sugar, flour, and cinnamon.

Stir until combined well.

Scoop spoonfuls of the cinnamon filling onto the cake batter.

Notes :

I believe you could make the cinnamon/sugar filling with just one stick of butter. Two sticks of butter, I believe, makes this filling a little heavy, and as a result, it tends to sink to the bottom a little bit during baking. Serve at room temperature or warm.
