How to Make 15 Bean Soup
15 bean soup is the name of this recipe, but you don’t need to buy 15 different kinds of beans to make it. Instead, you start with a bag of “bean soup mix.”
It’s essentially a dried bean assortment pack.
Once you’ve got that (look for it in the dried bean section of your grocery store), the rest of the ingredients are simple pantry staples. I’m sure you have the majority of them right now.

The Ingredients :
15 Bean Soup Mix Look for items labeled “bean soup mix.” Some mixtures have 13; others have 16. This is the exact bean soup mix I used (you’ll have some leftovers; try making my favorite Slow Cooker Ham and Bean Soup with it!). If your bean soup mix comes with a seasoning packet, toss it; this soup is already seasoned. See below for more information on the different types of beans in the 15 bean soup mix.
Bacon. The addition of bacon enhances the soup’s rich, hearty flavor, and the drippings are ideal for sautéing the remaining ingredients.
If you don’t want to use bacon, you can substitute olive oil for the bacon drippings.
Vegetables. For additional flavor and nutritional value. I went with the golden soup trio of onion, carrots, and celery.
Ham Bone. Is there a ham bone leftover in your future? Don’t be shy about putting it in here! To make your soup less salty, omit the salt and replace the chicken broth with water, then season to taste at the end.
If you prefer to make this soup vegetarian or don’t have a ham bone on hand, omit it.
Broth. If you don’t have a ham bone, chicken broth will help flavor your soup.
Spices. A flavorful combination of favorites, including the star smoked paprika. It adds a bewitching smokiness to the soup, making it taste complex and drawing your spoon back to the bowl for more.
Fire-Roasted Tomatoes. One of my pantry essentials! The tomatoes add flavor as well as a liquid to the soup.
Red Wine Vinegar. To add a hint of acidity and brightness. Do not omit it; it breathes new life into the soup.
Parmesan Cheese. The finishing touch.

This rich and hearty 15 bean soup is a healthy, inexpensive meal! Make it with a leftover ham bone or ham hock, or serve it as a filling vegetarian main.
Ingredients
- 0.17 pound 15 bean soup mix*
- Chopped fresh parsley for serving
- 0.67 strips of bacon cut into ½-inch wide strips or 1 tablespoon extra virgin olive oil
- 0.5 ribs celery diced
- 0.5 cloves garlic minced (about 1 tablespoon)
- 0.17 large yellow onion diced
- 0.83 medium carrots peeled and diced
- 1 cups low sodium chicken broth use water or unsalted broth if using the ham bone
- 0.33 teaspoons smoked paprika
- 0.17 bay leaf
- 0.17 ham bone – fat removed; optional plus any leftover ham diced from the bone
- 0.17 15-ounce can fire roasted diced tomatoes in their juices
- 0.17 teaspoon ground cumin
- 0.17 teaspoon ground chili powder
- 0.08 teaspoon dried thyme leaves
- 0.17 teaspoon red wine vinegar
- 0.04 teaspoon black pepper
- Kosher salt to taste
- Parmesan cheese for serving
Instructions
- Place the beans in a large mixing bowl before beginning to make the soup. Remove any debris by picking them up. Cover with at least 1 inch of cool water. Allow standing at room temperature or in the refrigerator overnight.
- When you're ready to make the soup, drain and rinse the beans in a colander. Place aside.
- Cook the bacon in a large pot or Dutch oven over medium low heat, stirring occasionally, until the fat has rendered and the bacon is fragile, about 8 minutes (be patient; low and slow is the name of the game here!). Remove the bacon to a plate with a slotted spoon and set aside, leaving the drippings in the pot. If you're using olive oil instead, simply warm it in the pot.
- Increase to a medium heat setting. Add the onion and cook for approximately 3 minutes, or until it begins to soften. Combine the garlic, carrots, and celery in a medium bowl. Cook, stirring occasionally until the carrots begin to soften, just around 5 minutes.
- Combine the beans, ham bone (if using), bay leaf, and liquid in a mixing bowl. If you're not using a ham bone, use the broth as the liquid; if you are, utilize 6 cups of water *or* unsalted chicken broth. (Your soup may be too salty if you use regular or even low sodium broth along with a ham bone.)
- Bring the soup to a boil by increasing the heat. Once it reaches a boil, decrease to a medium low heat. Cover the pot with a lid, leaving a small gap at the top. Allow the soup to simmer, stirring occasionally, for approximately 75 minutes, or until the beans are tender and beginning to break down.
- Combine the tomatoes, paprika, chili powder, cumin, thyme, and black pepper . Allow the soup to simmer, uncovered, for an additional 20 minutes to allow the flavors to blend. If the soup becomes too thick, add more water to achieve the desired consistency. Remove the bay leaf and ham bone from the pan (if using). Combine the vinegar and reserved bacon in a mixing bowl.
- Take a bite of the soup and add more salt and pepper if you think it needs it. The amount of salt you need will depend on how salty your broth and/or hambone are. I added an extra 1/2 teaspoon salt and a pinch of black pepper. Serve it hot with Parmesan and parsley on top.

*15 bean soup mix is a bag that has a mix of different types of dried beans in it. It doesn’t have to be exactly 15 beans. ; There are two well-known brands: Hursts and Goya. One is 15 and the other is 16. 13 Bean Soup Mix is also made by Bob’s Red Mill. Use only the beans in this recipe if you buy a mix with a packet of spices. Toss the packet.
