No-Bake Pineapple Dream Dessert topped with coconut is excellent, creamy, and ideal for summer. You’ll want to make this light vintage dessert again and again!
Ingredients:
1 cup powdered sugar
1 8-oz package cream cheese (softened)
1 8-oz tub whipped topping, like Cool Whip
1 cup crushed pineapple (drained)
Crust
20 graham crackers, crushed
1/2 cup melted butter
1/2 cup granulated sugar
Topping
1/4 cup diced pineapple (drained)
1/4 cup shredded coconut
INSTRUCTIONS :
- In a medium mixing bowl, combine the cream cheese with an electric mixer until slightly fluffy
- Regularly add the powdered sugar, and stir until well mixed
- Beat in the whipped topping, and mix until fluffy
- With a spoon, fold in the crushed pineapple, then set away
- In a small mixing bowl, combine the crushed graham crackers, granulated sugar, and melted butter until well combined, then, pat the mixture into a 9 X 9 baking dish
- Pet the filling over the crust, and smooth with a spatula until uniform
- Top with shredded coconut and diced pineapple, and cool for 1 hour or until firm
