  • Make sure to shred your own cheese. If you use 3 cups of Bisquick and your sausage balls are too dry, it’s possible that you’re using pre-shredded cheese. The moisture-blocking agent cellulose is applied to pre-shredded cheese.
  • If you use the measuring cup to scoop the mixture, you’ll end up with too much in the cup. Spoon the mixture into a measuring cup and level it with a knife.
  • In these, I ALWAYS use Jimmy Dean sausage.
  • I make these with hot sausage and think they’re fantastic (and definitely not too hot for the little people). Cheddar cheese goes so well with a little spiciness. Consider adding a pinch of cayenne pepper if you’re using regular or mild sausage.
  • Use the paddle attachment on a stand mixer if you have one. This mixture is very thick, so it will save your arm if you use a paddle attachment instead.
  • In order to get things done quickly, use a cookie scoop. This will also help you keep your sausage balls the same size.
